Freekeh, known as the healthy alternative to white rice, is an aromatic wheat grain packed with protein and fibre, rich in texture and flavour. This new must-have ingredient in UK kitchens has been used for millennia as a staple in Middle Eastern cooking - this nutritious and versatile grain has a naturally nutty and smokey flavour and can be used in the same way as bulgur wheat, wheat berries, couscous, rice, pearl barley or quinoa.

Freekeh comes from the Arabic word 'Al-fark' which translates as 'between'. Grains are harvested while still green, flame-roasted then rubbed between the fingers to remove the husks. According to legend, Freekeh was accidentally discovered when an attacking army set fire to crops in a small village. Faced with starvation upon their return, villagers sifted through the charred remains of their wheat crop, rubbing the husks in hope of salvaging something edible. The green wheat kernels inside had not been burned but rather roasted to perfection giving them a distinctive smoked flavour. Now, Palestinian farmers replicate this ancient process annually to transform their wheat harvest into delicious Freekeh.
