Freekeh, known as the healthy alternative to white rice, is an early-harvest green wheat grain packed with vitamins, minerals and fibre. This new must-have ingredient in UK kitchens has been used for millennia as a staple in Middle Eastern cooking - this nutritious and versatile grain has a naturally nutty flavour and can be used in the same way as bulgur wheat, wheat berries, couscous, rice, pearl barley or quinoa.
Freekeh comes from the Arabic word 'Al-fark' which translates as 'between' and refers to the harvesting practice of rubbing the ears of wheat between the fingers to separate the grain from the chaff. Baharat, an Arabic word which simply means 'a mixture of spice', is the perfect seasoning to add rich, authentic flavour to your Freekeh dishes; infused with notes of corriander, cardamom, cinnamon, nutmeg, bay and karaway.
Delicious in a zesty summer salad or in stews and soups in colder weather. Try Freekeh & Baharat with your picnics and barbeques this summer - dressed with olive oil, sumac or pomegranate molasses.
